Autumn Chicken Curry Salad

It’s definitely apple picking season around here! So many varieties to choose from and so many good dishes to make using your apple harvest. My family has lived in many places, so we enjoy an array of spices and flavors from all over the world. Today I’m making an Autumn Chicken Salad that is seasoned with curry. We make traditional flavored chicken salad during the summer months but when it’s cold outside and you want a little warmth in your food without turning on the stove this dish is perfect!!

I hope you enjoy it as much as my family does. It’s such a quick snack served on lettuce boats or if you wish to make it for lunch just add on top of your favorite fresh baked bread.

Ingredients

2 cups cooked chicken diced in bite sizes

2 cups crisp apples like gala or pink lady

1 cup diced grapes

1 cup yogurt (I used honey almond, but your favorite is great too!)

1 Tablespoon of Curry powder or substitute Pumpkin Pie Spice

Mix ingredients in a bowl then add to romaine lettuce leaves or another sturdy lettuce to make the lettuce boats.

Garnish

Sprinkle with 1 tablespoon of sunflower seeds and 1 tablespoon of pumpkin seeds

Arrange on romaine lettuce for a tasty snack or load it on your favorite bread for a delicious lunch.
