Lemon Chicken Piccata

Lemon Chicken Piccata with artichoke hearts and creamy wine sauce.

Lemon Chicken Piccata is always a family hit! We love the zesty flavors of lemon and capers to brighten up the delicious wine sauce. Artichoke hearts are added as a great addition to this dish. Whenever we make our meals, we search for the traditional recipe and then modify it for our tastebuds and food sensitivities. If your family is blessed to be able to eat traditional pasta that contains gluten, please feel free to use that in place of the rice noodles in this recipe. The white wine is used to deglaze the pan and adds a tanginess to the dish. The alcohol is cooked out but if your family prefers not to use it you can simply substitute using the same amount of chicken broth.

We first had this lovely dish on a vacation near the sea and it was just such a bright refreshing meal that I knew I had to recreate it to be gf for the rest of my family. One day we hope to get to Italy but until then we will continue to make these beautiful dishes and dream of eating al fresco in an Italian village by the sea.

Lemon Chicken Piccata

Ingredients

  • 4 Chicken Breast

  • 1/2 cup oat flour

  • 2 Tablespoons Garlic Powder

  • 2 Tablespoons Onion Powder

  • 1 Tablespoon Italian Herbs Seasoning

  • 1 Teaspoon Salt

  • 1 cup White Wine

  • 1 can Artichoke Hearts

  • 3 Tablespoons Capers in brine

  • 1 Tablespoon Minced Fresh Garlic

  • Juice of whole Lemon

  • 4 Tablespoons Butter

  • 1 Teaspoon Black Pepper

  • 1/4 Cup Mozzarella

  • 1 package Rice noodles cooked

Directions

Cut Chicken into fourths (medallion sized)

Place in bag with oat flour, garlic powder, onion powder and salt. Shake until all chicken is coated. Heat skillet with olive oil.

Cook chicken 3 minutes on each side until golden brown.

Remove chicken from skillet.

Deglaze skillet with white wine.

Add in juice of lemon, butter, pepper, artichokes, capers, fresh oregano and garlic.

Add cooked chicken back into pan with sauce.

Place mozzarella on chicken. Simmer for 5 minutes.

Serve on bed of noodles. Garnish with lemon wedges and fresh herbs.
