Spicy Chicken Chili

First memory of this dish was at an Autumn Festival high up in the Appalachian Mountains. It was so cold outside, and my daughters and I were having a great time at the festival. Lots of homemade crafts, art, games, petting zoo and food stands. We were hungry and looking for something hot and delicious to warm us up. We each got a steaming hot cup of this soup and immediately fell in love with it! Wow, it was just the right amount of creamy texture and bold spicy flavor that made me vow to go home and come up with a recipe that was every bit as good only this would be made with fresh herbs and 100% gluten free. We have even made it vegetarian friendly at times when we entertain friends and family that don’t eat meat. Just simply exchange the chicken with chickpeas and use vegetable broth instead of chicken broth. During the colder months it is just the meal to warm you up. Enjoy!

Ingredients

2 chicken fillets

1 yellow onion

4 green scallions

1 TBS garlic

2 Teaspoons Cumin

1 teaspoon coriander

1 Quart Chicken Broth

4 ounces cream cheese

1 Tablespoon Chipotle Hot sauce

2 cans of Navy Beans

Instructions

Heat up skillet with oil and put cut chicken in to brown.

When chicken is golden brown and cooked thouroghly add in the rest of the ingredients.

Cook until rich and creamy.

Garnish with hot sauce, green onions and sour cream! Bonus white cheddar cheese would be delicious too!
