Chicken Rice Noodle Soup

Chicken Noodle Soup is a household staple especially during cold and flu season. It is a cozy comfort food that i grew up with and knew the minute I got the sniffles my mother was going to grab a can of chicken noodle soup and soda crackers. It seemed to help me feel better like magic even if it was only because the salt laden broth was the only thing a person could taste when your nose was stuffed up.

When I had children of my own I knew chicken soup was a comfort food but I also knew that canned soup was never an option in my house. I set out to make a healthy version of a childhood classic and I am pretty excited to say that the entire family adores it. I load it with garlic, onion and herbs to flavor the broth and use homemade bone broth instead of store bought.

Whatever your budget and ability allows please feel free to substitue any homemade ingredient with a convenient store bought item. No judgement here. We all have busy lives and if you are the one not feeling well you probably would prefer a few pre made short cuts.

Ingredients

48 ounces chicken stock/broth

2 cups cooked diced chicken

2 cups carrots

1 diced onion

4 green onions

1 Tablespoon minced garlic

1 Tablespoon fresh rosemary

1 Tablespoon fresh sage

1 Tablespoon oregano fresh '

1 Tablespoon fresh thyme

1 package of glass or rice noodles

1 teaspoon kosher salt

1 teaspoon fresh cracked pepper

1 teaspoon poultry seasoning

Directions

Put all ingredients except rice noodles

Simmer until bubbling for 20 minutes then add in rice noodles. Cook 3 minutes extra.
