Pumpkin, Pumpkin I love Pumpkin!!!

I’m not sure about much but wow, I am certain that I do love pumpkin! I have spent a fortune in the past on going out to my local Starbucks during Autumn to get that delicious pumpkin bread and PS Chai. It is a tradition at my house to go after church and grab a delicious treat. However, the past few years we weren’t able to do that due to are growing gluten intolerance. I decided I would experiment in my kitchen with gf alternative flours until I could match the taste and maybe even tweak it to be a little better. Many trials and errors later and I finally found the perfect substitutes to give me that delicious flavor in a gluten free form. If you love cinnamon, cloves, ginger and molasses baked into a delicious pumpkin bread you are going to love this recipe!!!

Recipe and instructions

Ingredients

1 can pumpkin puree

3 large eggs

2 cups white sugar

1 Tablespoon Molasses

1 Tablespoon Vanilla Extract

1 Teaspoon Ceylon Cinnamon

1 Teaspoon All Spice (or nutmeg)

1 Teaspoon Ginger

2 Cups Oat flour

2 Teaspoons Baking Powder (NOT baking soda!)

Toppings

1/4 cup brown sugar

1/4 cup Pumpkin Seeds


Instructions

Sift flour and baking powder into a bowl.

Add the rest of the ingredients and use hand mixer and mix all ingredients until combined.

Pour batter into a greased bread pan.

Add Toppings

1/4 cup brown sugar 1/4 cup organic raw pumpkin seeds

Bake In 350 degrees pre heated oven bake for 45 minutes until done and brown sugar has caramelized on top.

Serve with butter, cream cheese or fresh out of the oven. Enjoy!
