Banana Oat Bread

Nothing says comfort like bananas and oatmeal. It’s one of the first foods children are introduced to. No wonder it brings back memories of home, comfort and feelings of well-being. Banana oat bread can be a cozy snack late night snack, or a delicious warm breakfast smothered with whipped butter or a smear of cream cheese. I paired this bread with a delicious honey butter today and I will add the recipe for that on the next slide.

This satisfying bread is gluten free and just enough sweetness to make it delicious. It has a hearty dense texture that you can really sink your teeth into and feel satisfied after a slice or two.

As always i suggest you check that your oat flour is labeled gluten free and organic to avoid any unwanted allergens.

Quick baking tip: always use room temperature eggs, butter and liquid unless otherwise specified. It can make a big difference in the final outcome.

Banana Oat Bread

Ingredients

2 Large bananas for batter, plus one sliced for decoration.

2 Large eggs.

1 Tablespoon Baking Powder.

1 Package Rapid rise yeast.

1/2 Teaspoon salt.

1/2 Cup melted butter.

1 Tablespoon Vanilla extract.

3 Cups of sifted Oat flour.

Directions

Combine all ingredients except oat flour in bowl. Whisk until blended thouroughly and smooth.

Add in oat flour and stir to combine. Do not over mix or it will toughen the bread.

Pour batter in greased bread loaf pan.

Decorate it with sliced bananas.

Place in pre-heated oven at 350 degrees F. for 40 minutes. Insert toothpick in middle to test that it comes out clean and bread is thoroughly baked.

Allow to cool before slicing.

Serve with Whipped Honey Butter.
